Purong Pinoy XO - a local version of a special Asian condiment, the XO sauce. Instead of using dried scallops, we tried the recipe with various local ingredients, like dried seafoods sourced from different provinces (tahong, hipon, dulong, pusit, labahita), we also added Kinuday/Kiniing which is a smoked bacon from the Cordillera that uses native pig and techniques local to the place, and to wrap it all up we added PURO Taba ng Talangka for an explosive umami taste.
